Chef Paulo Aires’ dishes are the result of an ongoing study of the great classics of South American cuisine, thanks to a large brigade made up only of chefs of different nationalities from Latin America. Each of them brought their own tradition and shared knowledge, skills and techniques to define a menu that is down-to-earth and with original flavors.

Typical Brazilian ingredients and sauces, Mexican spiciness, Peruvian delicacies, Chilean asperity, Colombian sweetness: Latin textures and flavors combine with Caribbean colors and raw materials of absolute freshness. Reserva Restaurante y Cocteles offers not only fish and shellfish, as in Copacabana’s most elegant restaurants, but also top-quality meat in the Argentine tradition, innovated by Reserva Restaurante y Cocteles with WeGrill’s Broiler System cooking method. This technique makes it possible to achieve perfect browning externally, thanks to the very high temperatures to which the meat is subjected, while at the same time having an uncommon tenderness. In addition, the absence of direct fire makes the preparation method particularly healthy and natural, suitable for all those who love flavors “pure” of meat.

The organoleptic journey concludes with our desserts, characterized by lingering notes of cocoa and tropical fruits, so as to grant the possibility of tasting less usual flavors compared to the Italian and European pastry tradition.
