THE CHEF
Originally from South America, Paulo Aires discovered his passion for cooking after arriving in Italy. There, he trained between Bergamo and Rome, studying to become a chef and deepening his command of Italian techniques and flavors.
Today he leads a brigade composed exclusively of Latin American cooks, with whom he pursues an ongoing exploration of his home continent’s culinary traditions. In his dishes, South American classics blend seamlessly with Italian ingredients, creating an original, substantial menu with a strong sense of identity—one that tells a story of cultures, experiences, and cross-cultural influences.
